Really, I do. I love them even more so when they are rolled into creamy dark chocolate. Truffles are delicious and I don't make them very often...say, once per year. This year, I am making these for the Annual Christmas potluck at my apartment complex. They are surprisingly simple to make, so you wont have any problems making them yourself!
Recipe:
1/2 cup strong coffee
1/2 cup heavy whipping cream
12 ounces dark chocolate
2 cups pistachios
Melt chocolate over hot water. Remove from heat.
Add cream and coffee. Stir really well.
Add half of the nuts.
Chill until firm.
Roll in the remaining nuts.
Chill.
Will store for a month.
